Pizza with Caramelized Onions, Peppers, and Chicken Sausage

A rainy, gloomy Monday calls for an exceptionally delicious dinner. For Kevin and I, this means pizza – we’ll take any excuse really. This version though, is special. It’s the same one that we created together for our very first pizza night back in 2011. The recipe is so simple: we basically take all of our favorite things (caramelized onions and peppers, sausage, cheese, lots of cheese) put them on top of store bought pizza dough, bake, and voilà!

Over the years, we’ve made all sorts of other pizzas together, but we always find ourselves coming back to our roots. The chicken sausage can easily be replaced with pepperoni or crumbly Italian sausage or meatballs – you really can’t go wrong here. Any way you slice it, you’ll have a hot, delicious, cheesy, homemade pizza on your table in 30 minutes and what could be better than that? This guy’s a keeper. I hope you’ll become a lifelong fan like we are.

Pizza with Caramelized Onions, Peppers, and Chicken Sausage

Yield: 8 servings | Prep time: 15 mins | Cook time: 15 mins 


  • 1 pre-made pizza dough or try my Easy Pizza Dough recipe
  • 1 tbsp. olive oil
  • 1 large yellow onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 4 pre-cooked chicken sausages, sliced in 1/4-inch rounds (we used Trader Joe’s Roasted Garlic Chicken Sausage)
  • 1 cup tomato basil marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated pecorino romano
  • 1 1/2 cups whole milk ricotta
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic salt
  • 1/4. tsp. red chili flake
  • salt and pepper


Preheat oven to 500 degrees F. and position a rack in the middle of the oven. If using a pizza stone, place it in the oven as it preheats.

Add olive oil to a skillet over medium heat, add your sliced peppers and onions and sautee, stirring frequently until browned. Season with salt and pepper and set aside.

In the meantime, working on a lightly floured surface, roll pizza into a 16″ diameter round and transfer to pizza pan or prepared baking sheet. Side note: we use this pan on top of our pizza stone – we got it as a wedding gift and swear by it. 

In a small bowl, mix ricotta, oregano, garlic salt, and chili flake. Spread marinara sauce over the surface of the dough leaving a 1/2-inch border. Top the sauce with pecorino & mozzarella cheeses, followed by the sausage, peppers, onions, and dollops of the ricotta mixture.

Place into the oven and bake for 15 minutes, or until the crust is golden brown and the cheeses have melted. Slice and serve immediately. Store any leftovers in an airtight container in the fridge. Cold pizza for breakfast tomorrow? Yes, please.
