

Toasted Coconut Banana Bread
- 3 to 4 very ripe bananas, smashed
- ½ cup salted butter, melted & cooled
- ¾ cup dark brown sugar
- 1 egg
- 1 ½ tsp vanilla extract
- ¼ cup sour cream
- 1 cup unsweetened coconut chips, toasted
- 1 ½ cups all purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- pinch nutmeg
- pinch sea salt
- ¾ cup chocolate chips or toasted walnuts (optional)
Spread coconut onto a parchment covered sheet pan and toast under broiler for 3-5 mins. Stir the coconut on the pan every minute or so and keep an eye on it to prevent burning. Set aside.
Preheat oven to 350° F.
Butter and flour 4 mini loaf pans or 1 8×4 inch loaf pan; set aside
Sift all dry ingredients together in a separate bowl and set aside. In a large bowl, whisk together the melted butter, brown sugar, and smashed bananas. Add your egg, vanilla, and sour cream. Sprinkle in the four mixture and mix until just combined – be careful not to over mix. Fold in toasted coconut, chocolate chips or walnuts or both! Add the mixture to your prepared pans and bake 35 mins for mini pans or 60 mins for large, or until a toothpick comes out clean. Cool on a rack (or eat immediately – no judgement here), slice and ENJOY!
