Toasted Coconut Banana Bread

bananas
Nothing makes me happier than the sight of brown, spotty, forgotten bananas in my kitchen. I use “forgotten” loosely here since I’m pretty sure I’m doing it on purpose. I couldn’t begin to tell you the number of times I’ve screamed out in horror as my husband started to walk a few beauts like these over to the trash.
I love a good excuse to make banana bread, which also gives me a good great excuse to EAT banana bread. See where I’m going here? Add in some toasted coconut, dark brown sugar, a few chocolate chips perhaps, and you’ve got something special. I think you’ll agree that this version is pretty, pretty, pretty, pretty good.

Note: Please do not do the laundry, feed the cat, or anything else while the coconut is under the broiler. Don’t ask me how I know this.

Toasted Coconut Banana Bread

  • 3 to 4 very ripe bananas, smashed
  • ½ cup salted butter, melted & cooled
  • ¾ cup dark brown sugar
  • 1 egg
  • 1 ½ tsp vanilla extract
  • ¼ cup sour cream
  • 1 cup unsweetened coconut chips, toasted
  • 1 ½ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch nutmeg
  • pinch sea salt
  • ¾ cup chocolate chips or toasted walnuts (optional)

Spread coconut onto a parchment covered sheet pan and toast under  broiler for 3-5 mins. Stir the coconut on the pan every minute or so and keep an eye on it to prevent burning. Set aside.

Preheat oven to 350° F.

Butter and flour 4 mini loaf pans or 1 8×4 inch loaf pan; set aside

Sift all dry ingredients together in a separate bowl and set aside. In a large bowl, whisk together the melted butter, brown sugar, and smashed bananas. Add your egg, vanilla, and sour cream. Sprinkle in the four mixture and mix until just combined – be careful not to over mix. Fold in toasted coconut, chocolate chips or walnuts or both! Add the mixture to your prepared pans and bake 35 mins for mini pans or 60 mins for large, or until a toothpick comes out clean. Cool on a rack (or eat immediately – no judgement here), slice and ENJOY!
